Grilled Romaine Chicken Salad

Remember my statement under My Love of Cooking & Entertaining When I was younger, I wasn’t the best at it but who is right? I mean, I wouldn’t have made the show Worst Cooks In America or anything like that but I did fix a lot of hamburger and chicken. I thought that grilled marinated chicken breasts in Italian dressing was gourmet.
Well, sometimes IT IS a little gourmet.

I attended a gathering at a friend’s home and another friend, Lisa, introduced me to Grilled Romaine with Marzetti Simply Dressed Caesar and flaked Parmesan cheese and croutons.

A M A Z I N G!!!

This is how she taught me. Cut the Romaine lengthwise leaving the stem attached at the bottom so it obviously doesn’t come apart while grilling. Drizzle olive oil on the cut side and grill! Turning so it doesn’t char.

 

I added my own take to this delight by adding my go-to marinated in Italian dressing grilled chicken. See ~ an oldie but goodie 😉 I grill the marinated chicken before the Romaine so it is all ready by the time the grilled Romaine is so the salad isn’t cold.

The way that I marinate the chicken breasts is by placing them in a Ziploc gallon size baggie with enough Italian dressing ~ usually a regular size bottle and a half of another ~ to cover all the pieces completely and I add some garlic powder as well. Marinate the combination in the refrigerator for a couple of hours.

Cut of the ends of the Romaine then cut up to your desired size of lettuce. Add dressing, Parmesan and croutons ~ serve and enjoy!!! Thank you Lisa for sharing your Grilled Romaine recipe with me!!!
