This meal was FABULOUS! And I’m glad to share with you what I used.
- 4 Tilapia Filets
- Extra Virgin Olive Oil
- 3 Tbsp. Paprika
- 1 tsp. Salt
- 1 Tbsp. Onion Powder
- 1 tsp. Black Pepper
- 1 tsp. Chili Powder
- 1 tsp. Old Bay Seasoning
- 1 tsp. Oregano
- 1/2 tsp. Garlic Powder
Preheat oven to 425 degrees.
Foil line a sheet pan. Lightly spray with a non-stick spray.
Once you rinse your tilapia, pat dry with a paper towel. You can either brush on the olive oil or use your hands to coat the fish. Then rub on the blackening spice mixture on both sides. (I had some left over that I pitched after, of course).
Place on foil and bake 10 to 15 minutes depending on the size of the filets. Watch not to over cook or you will end up with dry filets. You want it nice and browned like pictured above.
Baked Cheesy Potatoes
- 10 to 12 unpeeled Red Potatoes
- 1 stick of Real Butter; melted
- Garlic Powder
- Lawry’s Seasoned Salt
- Coarse Salt
- Shredded Cheddar Cheese
- Green Onion Tops (the green part)
Wash and cut red potatoes into chunky pieces.
Add potatoes to a pot of salted water and bring to a low boil for 10 to 15 minutes.
Cook until they pierce easily with a fork.
Coat potatoes with melted butter.
Season to taste with Garlic Powder, Season Salt and Coarse Salt.
Gently stir making sure not to break up the potatoes.
Place on a prepared sheet pan lined with foil and sprayed with non-stick spray.
Top with Cheddar Cheese and Green Onion tops.
Bake at 425 degrees for 20 to 25 minutes; or until the cheese is melted to your desire.
What I like about this meal is I can bake the filets and the potatoes at the same time! I put my potatoes in first then add the filets towards the end. This went very will with Pinot Grigio.
