Grilled Italian Bread with Prosciutto, Mozzarella & Smoked Gouda

As I went out to light the grill last night, the sky was absolutely beautiful and I just had to snap a photo with my iPhone. The days have been overly hot and the nights extremely muggy here in Southeast Ohio. Summer hasn’t let up for 2018 and it doesn’t look like it’s going to anytime soon. Fall and Winter will arrive and take over which will seem like an eternity to get back to warm days and nights with the opening of pools and the air conditioners running full force once again. I love all four seasons. Each bringing their own special something to my days.

I leave my grill covered and out all year long. I’ve grilled in the rain and snow. So grilling last night in the 90 degree heat didn’t phase me either especially when I wanted to try a new creation inspired by a segment I watched on a cooking show. Thus the creation of my Grilled Italian Bread with Prosciutto, Mozzarella & Smoked Gouda.

The Italian bread I purchased in the bakery section at Walmart for $1.00. It is soooooo good. I cut four pieces off with a bread knife and then sliced again to halve to make eight pieces. The remaining bread, I placed on a cookie sheet and baked at 350° until toasty ~ I’m guessing 15 to 20 minutes. I honestly don’t remember how long I baked it ~ I checked it a couple of times so it wouldn’t burn or get too hard. For the baked bread, I made dipping oil from olive oil and seasonings. 



  • Italian Bread Loaf Slices (you can use any bread of your choosing)
  • Prosciutto (I use Appleton Farms from Aldi’s)
  • Fresh Parsley
  • Shredded Mozzarella (Aldi’s)
  • Smoked Gouda (Aldi’s)
  • Garlic Powder
  • Olive Oil

I placed several pieces of the prosciutto on a cutting board and sliced it into bite size pieces. Separating the pieces the best I could once in the bowl. Using a fork with loosen the prosciutto making it easier to work with. Rough chop the parsley ~ I tried not to use as much of the stems as possible using mostly the leaves. Add around 1/3 cup shredded mozzarella and the same for the smoked gouda. I love Aldi’s smoked gouda. I used a hand grater and grated the smoked gouda in with the mixture. About the same amount. Again, I didn’t measure the mozzarella or the smoked gouda ~ just adding enough to where I thought it would add to and not over power the prosciutto.


Drizzle the olive oil over the bread and sprinkle with Garlic Powder. Place on grill for a few moments watching not to burn. Remove from grill placing grilled side down. Drizzle olive oil over the non-grilled side of your bread and sprinkle with Garlic Powder. Place the freshly seasoned side face down on the grill. Add prosciutto and cheese mixture to the already grilled side. Place on grill. Close the lid. Check in a minute to make sure the bread isn’t burning and the cheese is melting. Pull and serve! It’s that easy!
